Wheat pudding with raisins and nuts has many useful properties. Instead of the traditional walnuts, there are also forest nuts (hazelnuts). The pudding turns out very hearty and nutritious!
Description of preparation:
This is a traditional simple recipe Kuti with raisins. Kutia is prepared from wheat, poppy seeds, honey, raisins, dried apricots and hazelnuts (hazelnut). Hazelnut here replaces the traditional Kuti – walnuts. But, in my opinion, the forest nuts is a much tastier, besides unusual. Pre-take care of the wheat, before preparing the koliva, it must be soaked in water for several hours (or overnight). The same thing done and with grains of poppy. Good luck!
- Wheat — 1 Cup
- Poppy seeds — 3/4 Cup
- Honey — 2 Tbsp. spoon
- Raisins — 1/2 Cup
- Dried Apricots — 1/2 Cup
- Hazelnuts — to taste (handful)

How to make “Pudding with raisins”
Wheat grain fill with water and let them steep for a few hours. Then drain the water and rinse the wheat under running water.
Pour water into a saucepan, add wheat and bring to a boil over high heat, without lid. Boil until soft, about 20-30 minutes. Then remove from the heat, let them cool. A large part of the wheat broth pour into another container, leave a little broth in the pan with the wheat.
Soak the poppy seeds for a couple of hours in warm water.
Strain the poppy seeds through a sieve. Most of the water drain, a little Express.
Grind the poppy seeds in a blender, so that stood out white juice (white milk).
If you have a thick honey – warm it in a water bath to become more liquid.
Mix honey with poppy seed milk.
Cut the apricots in small cubes, nuts grind in a blender.
In a pot add wheat, poppy seed milk with honey.
This also put the apricots, nuts and raisins.
Mix thoroughly the contents of the pan. Infuse in a cool place for 1-2 hours.
Everything is ready, you can serve Christmas pudding on the table. On top decorate with dried apricots, raisins and nuts. Bon appetit!
