“Hedgehogs” with rice – a very popular, and most importantly — very tasty dish, familiar from childhood. This name they received due to the rice when cooking bulges outward, resembling the spines of a hedgehog.

I want to share with you the recipe of how to cook “hedgehogs” with gravy. Due to the simplicity of preparation and accessibility of ingredients, it can make every woman. To get these “hedgehogs” rather than the usual meatballs, take the long rice, it will be more like thorns; do not fry the balls, namely in the form of cheese pour sauce and simmer. “Hedgehogs” – a separate dish that you can serve vegetable salads, not side dishes, potatoes or cereal. There are in this dish one nice feature, namely, mouth-watering little balls with gravy will satisfy even the most demanding members of each family – children! Unusual appearance will not leave indifferent neither one child. Delight your family by preparing this dish.
- Ground pork — 400 Grams
- Rice — 0.5 Cups
- Onion — 2 Pieces
- Carrots — 1 Piece
- Tomato juice — 250 Ml
- Salt — 1 Tbsp. spoon
- Ground allspice — 2-3 Pinches
- Sunflower oil — 2 tbsp. spoon
Number of servings: 3-4
How to cook “Hedgehogs with gravy”
Prepare the necessary ingredients. Pork mince. Wash the rice, peel the onions and carrots.
Boil the rice until soft. Half a Cup of rice take the same amount of water, simmer for 7-10 minutes with the lid closed, stirring occasionally so the rice doesn’t burn. Add the cooked rice to the pork forcemeat, salt and pepper, mix well.
Carrots grate on a coarse grater. Cut onions into small cubes. Put on medium heat pan with sunflower oil. First, pour the onion, lightly fry it. Then add the carrots simmer for another 3-5 minutes. At the end add the tomato juice, sauté for a few minutes.
Pork meat with rice make the balls, put them in a form in which it will bake.
Prepared by ezhiki cover with sauce, cover with lid or foil and place in duhovo. Bake for 30-40 minutes at 180°C.
“Hedgehogs” gravy’s ready! Serve them with sauce and your favorite herbs.
