  • 1 l of meat broth.
  • 1 medium carrot,
  • 150 g cabbage.
  • 2 potatoes,
  • 1 small red beet,
  • ½ Of an eggplant,
  • 90 g of tomato puree,
  • 1 onion,
  • 1 tomato,
  • 75 g beans,
  • 3 tbsp vegetable oil,
  • 75 g bacon (bacon),
  • 3 tbsp sour cream,
  • 20 g garlic,
  • Bay leaf – to taste
  • allspice – to taste
  • salt – to taste
  • fresh herbs.


  • Peel and wash the vegetables. Onion cut into cubes, carrot, pepper, cabbage, eggplant, potatoes and beets – julienne.
  • Fry the carrots in vegetable oil for 3-4 minutes, then add the onion and fry for 3-4 minutes.
  • After that add chopped tomato and tomato paste. After 3 minutes, lay the beets and carcass 15 minutes on medium heat.
  • Zakipet broth, add 2 tbsp of sauteed vegetables and cabbage, after you put the potatoes and cook the soup on low heat for 7 minutes, then add the eggplant.
  • After 5 minutes, add remaining roasted vegetables and beans (if beans are old, soak before cooking it for 2-3 hours in water). Cook soup on low heat for another 10 min.
  • Finely cut greens, add to soup and remove from heat, make fat (fat), pre-crushed in a mortar with the garlic, cover the soup with a lid and let it sit 15-20 min.

    • 100-150 g mushrooms (white or mushrooms),
    • 4 bulbs,
    • 600 g flour,
    • 200-250 ml of kefir
    • 2 eggs,
    • salt – to taste

    • 150-200 ml of milk,

  • Washed and cleaned mushrooms soak in milk.
  • Then boil in salted water, finely cut into cubes and add to diced 2 onions, which are fried in a skillet in butter.
  • Put the filling on low heat for 5-7 minutes, carefully stirring occasionally.
  • Yogurt and eggs, mix thoroughly, add salt, soda, sifted flour and knead the dough. It should be soft and thick, but not too tight. Let the dough sit for 30-40 minutes.
  • Cool the mushroom stuffing. And the transition to a “uniform” for dumplings. Form dough rollers, cut into small pieces, make them into roundels, roll in flour and roll out the slices of medium thickness (not too thin, so when cooking the stuffing doesn’t fall out).
  • Form dumplings with mushroom stuffing, boil, cast away on a sieve, place in a pan, season with melted butter and onions, fried in vegetable oil.
  • Put in the oven for 2-3 minutes. Then bring to the table. A delicious addition to dumplings with mushrooms in addition to fried onions serves fresh herbs and sour cream.

    • 250 g of cottage cheese,
    • 2-3 eggs .
    • 5-7 tbsp flour,
    • 3 tbsp. powdered sugar,
    • 50 g raisins,
    • butter or oil for roasting
    • honey and sour cream in equal portions for gravy.


  • Raisins rinse and soak in warm water for 40 minutes.
